tasty

we made shiitake fried rice last night for dinner. it was delicious and so easy to make!

(photo from wholeliving)

Shiitake Fried Rice
Serves 4
Coarse salt and ground pepper
11/2 cups brown rice
1 tablespoon plus 1 teaspoon vegetable oil, such as safflower
2 large eggs, lightly beaten
1 pound shiitake mushrooms, stems removed, thinly sliced
3 garlic cloves, minced
2 tablespoons minced, peeled ginger (from a 2-inch piece)
1/4 to 1/2 teaspoon red-pepper flakes
1 cup frozen shelled edamame, thawed
4 scallions, thinly sliced on the diagonal
3 tablespoons fresh lime juice
2 tablespoons soy sauce
Directions

Bring a large saucepan of salted water to a boil; add rice. Boil until rice is al dente, 30 to 35 minutes. Drain and rinse well with cold water; drain again.
In a large nonstick skillet, heat 1 teaspoon oil over medium. Add eggs; season with salt and pepper and cook until set, 1 to 3 minutes. Transfer to a cutting board and let cool; roll up and thinly slice crosswise.
In same skillet, heat remaining tablespoon oil over medium-high. Add mushrooms, garlic, ginger, and red-pepper flakes; season with salt. Cook, tossing frequently, until shiitakes are tender, 2 to 4 minutes. Add rice, eggs, edamame, scallions, lime juice, and soy sauce. Cook, tossing, until rice is heated through, 2 to 3 minutes.

helping

i read a little while back on leslie's blog about a tragic event that had happened in august to a fellow blogger, stephanie (nie) and her husband christian, were in a terrible plane crash. i followed the link to her blog and it quickly became apparent how sweet and loving this family is. as i read about what had happened, my heart was aching for them and their small children, as well as their loved ones. like leslie, i couldn't stop thinking about them.

so i found the website www.nierecovery.com and clicked on the benefit blog. it is a great place to find out where you can donate an item, or perhaps bid on something you covet in one of the many auctions people are setting up to help raise a little money for the enormous medical bills this family will have. (not to mention the daily cost of keeping up the household and four wee ones)

to start, i have donated this elephant to the nienie benefit sale that will take place on september 23rd & 24th. it's on etsy- how easy is that?! it is being held by morgan of one more moore. so amazing.

the neilsons are in my thoughts and my heart goes out to their family and loved ones.

okanagan

some pictures from our trip to osoyoos this past weekend. i really loved the stark contrast of colors between the dry desert and the lush vineyards and fruit stands (and orchards). i can't wait to go back.
